Baked peaches with feta, honey and dukkah
Ingredients:
- 4 firm peaches, halved with stones removed
- 1 teaspoon of ground cinnamon
- 1 teaspoon of red chilli flakes
- 1/2 a teaspoon of Himalayan salt
- 1/2 a teaspoon of ground black pepper
- 1 tablespoon of raw virgin coconut oil
- 100g feta cheese
- 1 tablespoons of organic runny honey
- 2 tablespoons dukkah
- 10 mint leaves, shredded
Method:
- Preheat the oven to 180 degrees
- Combine the salt, pepper, chilli and cinnamon in a small bowl. Rub the peaches with this mixture, then place skin side down and roast for 15 minutes in a small roasting tray with the coconut oil
- Remove the peaches from the oven, and whilst still hot, drizzle them with honey
- Crumble the feta cheese over the warm the peaches, then sprinkle with dukkah and the shredded mint leaves
