Baked peaches with feta, honey and dukkah

Ingredients:

  • 4 firm peaches, halved with stones removed
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of red chilli flakes
  • 1/2 a teaspoon of Himalayan salt
  • 1/2 a teaspoon of ground black pepper
  • 1 tablespoon of raw virgin coconut oil
  • 100g feta cheese
  • 1 tablespoons of organic runny honey
  • 2 tablespoons dukkah
  • 10 mint leaves, shredded

Method:

  1. Preheat the oven to 180 degrees
  2. Combine the salt, pepper, chilli and cinnamon in a small bowl. Rub the peaches with this mixture, then place skin side down and roast for 15 minutes in a small roasting tray with the coconut oil
  3. Remove the peaches from the oven, and whilst still hot, drizzle them with honey
  4. Crumble the feta cheese over the warm the peaches, then sprinkle with dukkah and the shredded mint leaves
