Ijeh Recipe

This thin frittata, is a delicious mixture of eggs and herbs. Serves 4

Ingredients:

  • 5 organic eggs, lightly beaten
  • 1 tbsp rice flour
  • ΒΌ tsp baking powder
  • 2 cloves of garlic, finely chopped
  • 1 tomato, deseeded and chopped
  • 1 onion, finely chopped
  • A small handful of fresh mint
  • A small handful of fresh parsley
  • Pink salt and black pepper, to taste
  • 1 green chilli, finely chopped (optional)
  • 2 tbsp coconut oil

Method: 

  1. Combine all the ingredients except the coconut oil in a large bowl and whisk together until thoroughly combined.
  2. In a large frying pan, heat a quarter of the coconut oil until hot, then add dollops of the batter to the pan. Fry for around 2 minutes on each side until brown and fluffy and set aside. Using the remaining coconut oil, repeat this process until all the batter has been used.
  3. Serve the fritters warm with tomato salsa and coconut chutney
