Ijeh Recipe

This thin frittata, is a delicious mixture of eggs and herbs. Serves 4
Ingredients:
- 5 organic eggs, lightly beaten
- 1 tbsp rice flour
- ΒΌ tsp baking powder
- 2 cloves of garlic, finely chopped
- 1 tomato, deseeded and chopped
- 1 onion, finely chopped
- A small handful of fresh mint
- A small handful of fresh parsley
- Pink salt and black pepper, to taste
- 1 green chilli, finely chopped (optional)
- 2 tbsp coconut oil
Method:
- Combine all the ingredients except the coconut oil in a large bowl and whisk together until thoroughly combined.
- In a large frying pan, heat a quarter of the coconut oil until hot, then add dollops of the batter to the pan. Fry for around 2 minutes on each side until brown and fluffy and set aside. Using the remaining coconut oil, repeat this process until all the batter has been used.
- Serve the fritters warm with tomato salsa and coconut chutney
